Stuffed Peppers

Ingredients

  • 100g green lentils, rinsed, soaked for 1 hour
  • 2-3 red bell peppers, washed, remove seeds, keep the top
  • 2 garlic cloves, minced
  • 1 can diced tomatos
  • 1 small red onion
  • 3 regular mushrooms
  • 1/2 zucchini
  • 2 teaspoons italian seasoning for the lentils (optional)
  • 1/2 cup quinoa
  • salt to taste

Preparation

  1. First, rinse and soak the lentils so that they don't need to cook as long

  2. After that let them cook until done with the added salt and Italian seasoning

  3. At the same time the quinoa should be cooked as well in a separate pot

  4. Next in a pan sauté the garlic and onions as well as the mushrooms with a bit of oil if you need to use oil

  5. Now add the diced tomatoes and stir

  6. Next add the cooked lentils to the pan

  7. Give it a stir again and mix everything together

  8. Add the quinoa as well

  9. Preheat the oven at 200°C and prepare the peppers place them on parchment paper and put them in the oven for a few minutes to get them a bit soft

  10. Next, take them out and start stuffing them with the lentil quinoa filling

  11. Add a slice or two of zucchini on top and cover the peppers with the peppers stem top

  12. Place the peppers in the oven for around 15mins or until the peppers are smoothly soft

  13. Next serve and ENJOY along with a side of your choice
