Sweet Potato Punkin Soup & Salad

Ingredients

  • 1/2 can pumpkin purée
  • 2 cups veggie broth
  • 1 garlic clove
  • himalayan salt & pepper
  • red pepper flakes (optional)

Preparation

  1. Add the spices as you go and to taste. Everyone has a different palate! You can always add more broth for a thinner soup. Blend on high in high speed blender til thick, creamy, and hot. Top with veggies like cilantro, red peppers, onion, or garlic

  2. Salad was a bed of spinach topped with bells, cucumbers, sprouts, onions, carrot, cilantro, radish, and cabbage
