Tasty Crockpot Quinoa Veggie Burgers
Ingredients
- 2 cups quinoa, cooked
- 1 tbsp. extra virgin olive oil
- 1 large egg
- 1 cup bread crumbs
- 1 tbsp. salt
- 1 tbsp. pepper
- 2 tbsp. garlic powder
- 1 cup arugula
- 1 red onion, sliced
- 2 tomatoes, sliced
- wheat buns
Preparation
Combine all ingredients (except buns, arugula, onion, and tomatoes) in a large bowl
Stir until thoroughly combined
Begin forming mixture into patties
Place patties in crockpot
Cook for about 3 hours on high, or until patties are cooked through
Serve on wheat buns with arugula, onions, and tomatoes
