Tasty Crockpot Quinoa Veggie Burgers

Ingredients

  • 2 cups quinoa, cooked
  • 1 tbsp. extra virgin olive oil
  • 1 large egg
  • 1 cup bread crumbs
  • 1 tbsp. salt
  • 1 tbsp. pepper
  • 2 tbsp. garlic powder
  • 1 cup arugula
  • 1 red onion, sliced
  • 2 tomatoes, sliced
  • wheat buns

Preparation

  1. Combine all ingredients (except buns, arugula, onion, and tomatoes) in a large bowl

  2. Stir until thoroughly combined

  3. Begin forming mixture into patties

  4. Place patties in crockpot

  5. Cook for about 3 hours on high, or until patties are cooked through

  6. Serve on wheat buns with arugula, onions, and tomatoes
