Tofu Satay with Fried Greens and Rice
Ingredients
- Spring onion
- Bell pepper or similar pepper
- Sesame oil (some)
- Vegetable stock (some)
- Peanut butter (a couple of tablespoons)
- Chilli flakes or fresh chilli
- Soy sauce
- Tofu
- Mixed greens or vegetables for frying
- Rice
Preparation
Fry spring onion and pepper in sesame oil for about 5 minutes.
Add vegetable stock and a couple of tablespoons of peanut butter.
Adjust to taste and optimum thickness by adding more of each ingredient as needed.
Add chilli flakes or fresh chilli and soy sauce to finish.
Cut tofu into cubes and fry or grill until golden.
Fry the mixed greens in oil until tender.
Cook rice according to package instructions or by boiling until done.
Serve tofu satay with the sauce, fried greens, and rice together.
