Vegan Basil Pesto Pasta
Ingredients
- 1-2 cups packed basil leaves
- 1/3 cup pine nuts (walnuts, sunflower seeds, or almonds also work)
- 1/4 cup olive oil
- 3 cloves garlic
- 1 tablespoon lemon juice (more to taste)
- 3 tablespoons nutritional yeast
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili flakes
- 1/2 teaspoon salt (more to taste)
- pasta for 3-4 servings
Preparation
Cook pasta according to package instructions
In a food processor, blend all the ingredients until smooth and creamy.
Add more salt and lemon juice to taste.
Mix with the cooked pasta and serve.
