Vegan Buffalo Cauliflower with Homemade Ranch

Ingredients

  • 1/2 head cauliflower
  • 1 cup chickpea flour
  • 3/4 to 1 cup water
  • Himalayan salt, to taste
  • Pepper, to taste
  • Garlic powder, to taste
  • 1/3 cup Frank's RedHot buffalo sauce
  • 1/3 cup Earth Balance dairy-free butter

Preparation

  1. Make chickpea batter with 1 cup flour and 3/4-1 cup water. Whisk together. Season with spices to taste

  2. Coat each piece of cauliflower in the batter and place on baking pan with parchment paper

  3. Bake at 375°F for approximately 30-35 minutes flipping halfway through

  4. Make buffalo sauce on stove top. Melt equal parts approximately 1/3 cup each of butter and hot sauce

  5. Take out cauliflower pieces and coat them in sauce

  6. Place back in oven for additional 5-10 minutes
