Vegan Chili with Vegetables and Meatballs
Ingredients
- Oil
- 1 diced red onion
- 1 diced green pepper
- 1 diced red pepper
- 2 cans diced tomatoes (no salt added)
- Gardein Meatless Meatballs
- 1 large can black beans (no salt added)
- 1 small can pinto beans (no salt added)
- 1 bunch green onions (chopped)
Spices
- Organic cumin
- Organic chili powder
- Organic pink salt
- Organic garlic powder
- Organic cayenne pepper
- Tajin seasoning
Toppings
- Crushed tortilla chips
- Fresh pico de gallo
Preparation
Start with a little oil in the pan and heat on medium.
Add all chopped veggies and let simmer on low, stirring occasionally.
Add the spices and keep simmering and stirring.
Then add partly or completely thawed Gardein meatballs.
Add diced tomatoes and let simmer, covered, for about 10 minutes.
Break apart the meatballs with a spatula to the desired size.
Add more seasonings to taste.
Let simmer for 10 to 15 more minutes on low.
Lastly, drain the beans and add them to the pot, mix and let simmer covered for another 10 to 15 minutes.
Let cool and serve with toppings.
