Vegan Creamy Mushrooms

Ingredients

  • 3tbsp olive oil
  • ▫️3tbsp oat flour @bobsredmill
  • ▫️500ml almond milk @alpro
  • ▫️1tspn chopped garlic
  • ▫️1/2 cup chopped red onions
  • ▫️250g chopped mushrooms
  • ▫️1/2 chopped green pepper
  • ▫️1/2 chopped yellow pepper
  • ▫️1tspn Himalayan salt
  • ▫️1tspn black pepper
  • ▫️handful chopped parsley
  • ▫️chillies if you like it hot
  • ▫️sweet potatoes
  • ▫️chilli flakes
  • ▫️durum wheat flatbreads @crostamollica

Preparation

  1. White sauce: heat olive oil, mix in oat flour then gradually add almond milk mixing it in with heat reduced to minimum

  2. Add garlic and red onions

  3. Cook for 1min then add mushrooms and peppers

  4. Let cook for 3mins adding more milk if needed

  5. Season

  6. Add parsley

  7. Chillies or chilli flakes

  8. Fill mini piadina wraps and too with steamed sweet potatoe wedges, sprinkled with chilli flakes. I used @crostamollica from @waitroseandpartners
