Vegan Fajita Vegetable Pan Mix

Ingredients

  • 2 carrots
  • 1 yellow pepper
  • 1 red onion
  • a couple of handfuls of cherry tomatoes
  • 1 tablespoon Fajita smoky seasoning

Preparation

  1. Slice 2 carrots into shreds, 1 yellow pepper, 1 red onion, and prepare a couple of handfuls of cherry tomatoes.

  2. Add all vegetables to the pan except the tomatoes and cook for a bit.

  3. Add the cherry tomatoes and continue cooking until they are done, as they cook quickly.

  4. Remove the pan from heat.

  5. Add 1 tablespoon of Fajita smoky seasoning and stir it in well.

  6. For added protein, consider including black beans or something similar next time, as this enhances the meal.
