Vegan Fajita Vegetable Pan Mix
Ingredients
- 2 carrots
- 1 yellow pepper
- 1 red onion
- a couple of handfuls of cherry tomatoes
- 1 tablespoon Fajita smoky seasoning
Preparation
Slice 2 carrots into shreds, 1 yellow pepper, 1 red onion, and prepare a couple of handfuls of cherry tomatoes.
Add all vegetables to the pan except the tomatoes and cook for a bit.
Add the cherry tomatoes and continue cooking until they are done, as they cook quickly.
Remove the pan from heat.
Add 1 tablespoon of Fajita smoky seasoning and stir it in well.
For added protein, consider including black beans or something similar next time, as this enhances the meal.
