Vegan Gluten Free Alphabet Soup
Ingredients
- 1 tablespoon olive oil
- 1 red onion, chopped
- 4 cloves garlic, sliced
- 1/2 cup red lentils, washed
- 2 celery stalks, sliced
- 2 carrots, sliced thin
- 2 cups green cabbage, chopped
- 1 large potato, diced small
- 1 15-ounce can tomato sauce
- 1 tablespoon Italian seasoning
- 1/2 teaspoon red chili flakes
- 1/4 teaspoon turmeric
- Pepper to taste
- 2 vegetable bouillon cubes
- 8 cups water
- GF alphabet pasta (e.g., Edison Grainery alphabeto's)
Vegan topping
- Cashews
- Brazil nuts
- Nutritional yeast
- Salt
- Pepper
- Garlic powder
Preparation
Boil GF alphabet pasta in a separate pot according to package instructions.
In a large soup pot, saute onion and garlic in olive oil until golden.
Add the remaining ingredients (lentils, celery, carrots, cabbage, potato, tomato sauce, Italian seasoning, red chili flakes, turmeric, pepper, vegetable bouillon cubes, and water), bring to a boil, lower heat, cover, and simmer for approximately 20 minutes.
Add the boiled alphabet pasta to the soup.
Blend cashews, Brazil nuts, nutritional yeast, salt, pepper, and garlic powder to make vegan parmesan.
Top the soup with the vegan parmesan.
