Vegan Lasagna Soup

Ingredients

  • lasagna soup:
  • 1 can of chopped tomatoes
  • 100 g of vegan mince
  • 6 sheets of lasagna noodles
  • vegan cream cheese
  • italian herbes
  • salt to taste

Preparation

  1. Warm up the tomato chinks with one can of water and a teaspoon of Italian herbes

  2. Crush the lasagna sheets into the soup and cook until tender

  3. Stir in the vegan mince and let it simmer for 5 min

  4. Serve with a tablespoon of cream cheese and some fine chopped scallions
