Vegan Leek Bolognese

Ingredients

  • 2 packs plant mince (440g)
  • 4 carrots
  • 1 medium onion
  • 2 leeks chopped in fine rings
  • 1 tbsp olive oil
  • 1 tspn chopped garlic
  • 2 tspn salt
  • 1 tspn pepper
  • 1 tbsp balsamic vinegar
  • 1 tin organic chopped tomatoes
  • 1/2 tspn nutmeg
  • 1 tspn chopped green chillies (optional)

Preparation

  1. Book the kettle for the spaghetti

  2. Chop your leeks

  3. Peel your carrots & onion, grind

  4. Heat the oil in a wok

  5. Add garlic, fry for a few seconds

  6. Add carrots, onions & leeks

  7. Cover and cook for a minute

  8. Meanwhile cook your spaghetti

  9. Medium-high flame, add remaining ingredient to your wok

  10. Cook for a few minutes

  11. Serve & garnish with basil
