Vegan Leek Bolognese
Ingredients
- 2 packs plant mince (440g)
- 4 carrots
- 1 medium onion
- 2 leeks chopped in fine rings
- 1 tbsp olive oil
- 1 tspn chopped garlic
- 2 tspn salt
- 1 tspn pepper
- 1 tbsp balsamic vinegar
- 1 tin organic chopped tomatoes
- 1/2 tspn nutmeg
- 1 tspn chopped green chillies (optional)
Preparation
Book the kettle for the spaghetti
Chop your leeks
Peel your carrots & onion, grind
Heat the oil in a wok
Add garlic, fry for a few seconds
Add carrots, onions & leeks
Cover and cook for a minute
Meanwhile cook your spaghetti
Medium-high flame, add remaining ingredient to your wok
Cook for a few minutes
Serve & garnish with basil
