Ramen on a Cold Rainy Evening
Ingredients
- Two portions of soba noodles
- Brown miso paste
- 3 cloves of garlic, crushed
- 200 ml boiling water
- A block of tofu, cubed
- 1 tsp sweet smoked paprika
- 1 tsp turmeric powder
- 1 tbsp tamari
- 1 tbsp sesame oil
- Handful of greens (broccoli and kale)
- 50g mushrooms sliced
- 2 tbsp tamari
- 2 tbsp sweetcorn
Preparation
In a bowl mix together the cubed tofu, paprika, turmeric, 1 tbsp of tamari and sesame oil. Spread the tofu onto a baking tray. Bake at 200c for 15-20 minutes until the tofu starts to go golden, firm and crispy.
In the meantime, add the hot water, miso paste and garlic to a large saucepan. Bring to the boil then simmer for 10 minutes. Add the greens after 8 minutes and blanch in the broth.
In a frying pan brown the mushrooms on a medium heat, adding a little oil if needed. Add the tamari towards the end of cooking and keep stirring until the mushrooms have soaked up the liquid.
Cook the soba noodles according to instructions.
When everything is cooked, add the broth, noodles, greens, mushrooms, sweetcorn and tofu to a large ramen bowl.
