Vegan Pho with Tofu, Rice Noodles & Miso Paste

Ingredients

  • 140g tofu (veg)⠀
  • 150g rice noodles (gf)⠀
  • 1 sachet brown rice miso paste(gf)⠀
  • 1.5l of veg stock (veg) ⠀
  • 1/2 tsp chilli flakes, turmeric, ginger⠀
  • 2 bay leaves ⠀
  • 3 spring onions ⠀
  • 1 red chilli ⠀
  • sesame seeds⠀
  • 2 shallots⠀
  • 3 cloves garlic⠀
  • 2 tbsp tamari ⠀
  • punnet of shimeji mushrooms⠀
  • 1 celery stalk⠀

Preparation

  1. Finely dice the shallots and add them to a large pot with the dried spices & bay leaves⠀

  2. Slice the tofu and add to the frying pan (you can also do this with cubed tofu)⠀

  3. After 5 minutes add the minced garlic and fry for extra 30 seconds ⠀

  4. Add the veggie stock, miso paste, tamari and stir, leave for 20 minutes ⠀

  5. Add the rice noodles and shimeji mushrooms until cooked then serve into bowls ⠀

  6. Top with finely chopped spring onion, chopped chilli, chopped celery and sesame seeds

  7. Enjoy!
