Vegan Pho with Tofu, Rice Noodles & Miso Paste
Ingredients
- 140g tofu (veg)⠀
- 150g rice noodles (gf)⠀
- 1 sachet brown rice miso paste(gf)⠀
- 1.5l of veg stock (veg) ⠀
- 1/2 tsp chilli flakes, turmeric, ginger⠀
- 2 bay leaves ⠀
- 3 spring onions ⠀
- 1 red chilli ⠀
- sesame seeds⠀
- 2 shallots⠀
- 3 cloves garlic⠀
- 2 tbsp tamari ⠀
- punnet of shimeji mushrooms⠀
- 1 celery stalk⠀
Preparation
Finely dice the shallots and add them to a large pot with the dried spices & bay leaves⠀
Slice the tofu and add to the frying pan (you can also do this with cubed tofu)⠀
After 5 minutes add the minced garlic and fry for extra 30 seconds ⠀
Add the veggie stock, miso paste, tamari and stir, leave for 20 minutes ⠀
Add the rice noodles and shimeji mushrooms until cooked then serve into bowls ⠀
Top with finely chopped spring onion, chopped chilli, chopped celery and sesame seeds
