Vegan Satay Stir-Fry with Peanut Sauce

Ingredients

  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce (plus more to taste)
  • 2-3 spring onions
  • A handful of red bell pepper
  • Broccoli (amount as desired)
  • 1 red chili
  • Water (as needed)
  • Peanut butter (start with 1 tablespoon, add more to taste)
  • Optional: vegan chicken substitute
  • Fresh spring onions for garnish

Preparation

  1. Fry 2-3 spring onions, a handful of red pepper, broccoli and 1 red chili in 1 tablespoon of sesame oil and a tablespoon of soy sauce for around 3 minutes

  2. Add your chicken if you’re using a meat replacement or omit if you just want veg

  3. Add some water and peanut butter and adjust measures for desired consistency, starting with 1 tablespoon of peanut butter and adding more until it’s at the right thickness

  4. Add soy sauce to taste

  5. Top with fresh spring onion and enjoy
