Vegan Sweet Potato Brussels Sprouts Bake
Ingredients
- 4 tbsp olive oil
- 2 sweet potatoes, peeled and diced
- 500g brussels sprouts, halved and trimmed
- fresh parsley, chopped
- 3 garlic cloves, chopped
- 2 tsp salt
- 1 tsp pepper
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 1/2 cup broth
- 15 dried cranberries
- 150g vegan cheese
Preparation
Preheat oven to 350F
Combine all ingredients except the cranberries and cheese in a baking mold and mix well. Bake for 20 minutes at 350 F
Take it out and mix briefly. Return to oven for 10 minutes
Take it out again, spread the cheese and cranberries, and put back in until cheese is crispy (about 10 minutes)
