Zucchini Fritters


  • 1 large or 2 small zucchini
  • 1/2 tsp sea salt
  • 1/2 t oil
  • 1 t ground flax
  • 1 tsp minced garlic (or powder)
  • 2 t nutritional yeast
  • 1/2 onion, finely diced
  • 1/4 cup chickpea flour
  • 1 t fresh or dried basil


  1. Grate zucchini, sprinkle with sea salt and place into a clean dish towel in a bowl. Let sit for at least 10-15 minutes then squeeze any remaining liquid before removing from the dish towel. Stir together dry ingredients then add in zucchini, mixing well

  2. Heat frying pan over medium heat and add oil. Shape fritters into desired sized patties and fry on each side for about 5 minutes or until browned and crispy

  3. Enjoy immediately with cashew sour cream
