15 Minute Chicken Parm Sub

Ingredients

  • 2 teaspoons Parmesan
  • 1 teaspoon cornmeal
  • Pinch dried oregano
  • 1 raw boneless, skinless chicken breast (3 to 4 ounces)
  • 1 teaspoon olive oil
  • 1 100 percent whole wheat bun
  • 1/4 cup marinara sauce
  • 1 slice Swiss cheese

Preparation

  1. Preheat the oven to 400°F (200°C).

  2. In a small bowl, combine Parmesan, cornmeal, and dried oregano.

  3. Rub the chicken breast with olive oil and coat it with the Parmesan mixture.

  4. Place the coated chicken breast on a sheet tray and bake it until cooked through, about 12 minutes. Remove from the oven.

  5. Switch the oven to broil. Place the cooked chicken breast on a bun and top it with marinara sauce and Swiss cheese.

  6. Place the assembled sub in the oven and broil until the cheese is melted, approximately 2 more minutes.
