Avocado Tofu Salad Sandwich

Ingredients

  • 1 block (450g) of extra firm tofu, drained and lightly pressed of water
  • 1 medium avocado, ripe and seed removed
  • 2 tbsp plain unsweetened vegan yogurt or vegan mayo
  • 1 tbsp Dijon mustard
  • 1 tbsp sweet relish
  • 1 tsp lemon juice
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Fresh cracked pepper (black and white)
  • 1/4 tsp smoked paprika (optional)
  • 2 scallions, thinly sliced
  • Few sprigs of fresh dill
  • 1/4 tsp salt or more to taste
  • 6-8 slices of bread (e.g., Silver Hills Bakery)

Preparation

  1. In a bowl, scoop out the avocado and mash it thoroughly with a fork.

  2. Chop the tofu into small cubes and add them to the bowl with the mashed avocado.

  3. Add the vegan yogurt or vegan mayo, Dijon mustard, sweet relish, lemon juice, garlic powder, onion powder, freshly cracked pepper, and smoked paprika (if using).

  4. Include the thinly sliced scallions and fresh dill into the mixture.

  5. Fold all the ingredients together well using a spatula until fully combined. Adjust the seasonings according to your taste.

  6. Scoop a portion of the mixture onto slices of bread to make sandwiches or serve with crackers.

  7. If you're not a fan of avocado, you can substitute 1/4 cup of vegan mayo and add some turmeric for a brighter yellow color.

  8. Due to avocado's tendency to brown, enjoy the sandwich relatively soon after preparing. You can also make smaller batches if desired.

  9. To store, place the leftover avocado and tofu mixture in airtight containers. Storing avocado with sliced red onion can help keep it fresh longer.
