Baked Fries with Arugula and Tangy Dressing

Ingredients

  • potatoes
  • smoked paprika
  • garlic powder
  • black pepper

Tangy dressing

  • 3 tbsp hemp seeds
  • 6 dates
  • 3 tbsp nutritional yeast
  • 2 stalks celery
  • juice of 1 large lemon
  • 1 dash turmeric (optional)
  • water

Preparation

  1. Soak the potatoes in water for 20 minutes.

  2. Rinse the potatoes.

  3. Rub the potatoes with smoked paprika, garlic powder, and black pepper.

  4. Bake the potatoes for around 45 minutes in a 200C/400F oven.

Dressing blend

  1. Blend all ingredients in a blender or food processor.

  2. Add water a little at a time until desired consistency is reached.
