Vegan Sunflower Seed Cheese

Ingredients

  • 2 cups raw sunflower seeds, soaked & drained
  • 1/4 cup nutritional yeast
  • 1/4 cup lemon juice
  • 4 tsp white miso paste
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/4 tsp turmeric
  • Black pepper, to taste
  • Himalayan salt, to taste

Preparation

  1. Soak the sunflower seeds in water for at least 4 hours or overnight, then drain.

  2. Place all ingredients in a food processor and blend until the mixture is as smooth as possible, stopping to scrape the sides as needed.

  3. Prepare the mold by lining it with parchment paper or using a silicone mold.

  4. Scoop the cheese mixture into the mold and smooth the top.

  5. Cover and chill in the refrigerator for at least 4 hours or overnight to let the cheese firm up.

  6. Serve this vegan cheese with raw crackers or vegetables or spread on desired foods.
