Vegan Sunflower Seed Cheese
Ingredients
- 2 cups raw sunflower seeds, soaked & drained
- 1/4 cup nutritional yeast
- 1/4 cup lemon juice
- 4 tsp white miso paste
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/4 tsp turmeric
- Black pepper, to taste
- Himalayan salt, to taste
Preparation
Soak the sunflower seeds in water for at least 4 hours or overnight, then drain.
Place all ingredients in a food processor and blend until the mixture is as smooth as possible, stopping to scrape the sides as needed.
Prepare the mold by lining it with parchment paper or using a silicone mold.
Scoop the cheese mixture into the mold and smooth the top.
Cover and chill in the refrigerator for at least 4 hours or overnight to let the cheese firm up.
Serve this vegan cheese with raw crackers or vegetables or spread on desired foods.
