Ingredients
- sundried tomato + garlic couscous
- ✨ balsamic roasted sweet potatoes
- ✨ edamame beans
- ✨ garlic-fried spinach
- ✨ braised red cabbage
- ✨ pickled beetroot
- ✨ homemade dressing: 2 tsp balsamic, 1 tsp nutritional yeast, 1 tsp dairy-free mayo (all mixed together)
- ✨ homemade oil-free hummus: 1 tin chickpeas, 3 tbsp veg stock, 2 tbsp lemon juice, 1 tbsp hot sauce, 1 garlic clove, 1 tsp chilli flakes (all blended together)
- ✨ topped w/ spring onions, chillis and cracked black pepper
