Ingredients

  • sundried tomato + garlic couscous
  • ✨ balsamic roasted sweet potatoes
  • ✨ edamame beans
  • ✨ garlic-fried spinach
  • ✨ braised red cabbage
  • ✨ pickled beetroot
  • ✨ homemade dressing: 2 tsp balsamic, 1 tsp nutritional yeast, 1 tsp dairy-free mayo (all mixed together)
  • ✨ homemade oil-free hummus: 1 tin chickpeas, 3 tbsp veg stock, 2 tbsp lemon juice, 1 tbsp hot sauce, 1 garlic clove, 1 tsp chilli flakes (all blended together)
  • ✨ topped w/ spring onions, chillis and cracked black pepper
