Buddha Bowl with Homemade Oil-Free Hummus
Ingredients
- Sundried tomato and garlic couscous
- Balsamic roasted sweet potatoes
- Edamame beans
- Garlic-fried spinach
- Braised red cabbage
- Pickled beetroot
- Spring onions
- Chillis
- Cracked black pepper
Hummus
- 1 tin chickpeas
- 3 tbsp vegetable stock
- 2 tbsp lemon juice
- 1 tbsp hot sauce
- 1 garlic clove
- 1 tsp chilli flakes
Dressing
- 2 tsp balsamic vinegar
- 1 tsp nutritional yeast
- 1 tsp dairy-free mayo
Preparation
Blend all hummus ingredients together to make oil-free hummus.
Mix all dressing ingredients together to make the homemade dressing.
Prepare sundried tomato and garlic couscous.
Roast sweet potatoes with balsamic vinegar.
Fry spinach with garlic.
Braise red cabbage.
Use prepared pickled beetroot.
Add edamame beans.
Assemble all components in a bowl.
Top with spring onions, chillis, and cracked black pepper.
