Carrot and Coriander Soup

Ingredients

  • 700g carrots
  • 1 large onion
  • 3 garlic cloves
  • 1 thumb of ginger
  • 2 stalks of celery
  • 1.5 litres vegetable stock
  • 1/2 bunch of fresh coriander
  • Olive oil

Preparation

  1. Roughly chop the vegetables.

  2. Sauté the onion, garlic, ginger and celery in olive oil for 5 minutes.

  3. Add the remaining ingredients and simmer for 30 minutes.

  4. Allow to cool and blend until smooth.
