Carrot and Coriander Soup
Ingredients
- 700g carrots
- 1 large onion
- 3 garlic cloves
- 1 thumb of ginger
- 2 stalks of celery
- 1.5 litres vegetable stock
- 1/2 bunch of fresh coriander
- Olive oil
Preparation
Roughly chop the vegetables.
Sauté the onion, garlic, ginger and celery in olive oil for 5 minutes.
Add the remaining ingredients and simmer for 30 minutes.
Allow to cool and blend until smooth.
