Cauliflower with Swede Puree

Ingredients

  • cauliflower
  • 1 Tsp of nutritional yeast
  • 1/2 tsp of arrow root
  • Himalayan salt
  • coconut oil

Preparation

  1. The cauliflower was steamed as well and then coated with pan fried garlic and onion. I heated up a cup of oat milk, added 1 Tsp of nutritional yeast and 1/2 tsp of arrow root. Stirred well and set aside. I placed the cauliflower in the ovenproof dish, poured over the milk, sprinkled with more nutritional yeast and some tofu

  2. Then I baked in the oven for 10 minutes

  3. Swede or rutabaga is nutritionally rich in vitamin C, A, B6, potassium, manganese and fibre, to name just a few. It is low in calories and tastes delicious

  4. Nutritional Yeast is a great source of B vitamins
