Vegan Savoury Cauliflower Pancakes

Ingredients

  • 60g of flour (i like chickpea) {about 2/3 cup}
  • between 1/4 - 1/2 a head of cauliflower (depending on the size and how much you want)
  • 2/3 cup unsweetened plant milk
  • 1/2 tbsp flaxseed
  • (about 1 tbsp) nutritional yeast
  • pinch of smoked paprika & onion powder
  • squeeze of lemon
  • 1/2 tsp baking powder

Preparation

  1. Boil the cauliflower until very soft (10-12 mins ish)

  2. Meanwhile mix the remaining ingredients apart from the baking powder

  3. Drain the cauliflower and mash it with a potato masher (i like it slightly chunky but you could also purée it with a blender)

  4. Stir the mashed cauliflower into the chickpea flour batter (if you need to add more milk you can do so but you do want it thick)

  5. Once you’re about ready to cook, stir in the baking powder

  6. Pour your batter into a hot frying pan (i normally fry mine in some basil/chilli/garlic oil but it’s optional) - i like to cook mine all at once so they’re hot but this uses two large frying pans

  7. Cook until browned on the underside, flip and cook until browned again

  8. Repeat with the remaining batter and serve
