BBQ Chickpea Pancakes with Cauliflower

Ingredients

  • 2/3 cup chickpea flour
  • 2/3 cup plant-based milk
  • 1/2 tablespoon flaxseed
  • 1 tablespoon nutritional yeast
  • pinch of onion powder
  • pinch of smoked paprika
  • large pinch of BBQ seasoning
  • squeeze of lemon
  • 1/2 teaspoon baking powder
  • 1 small cauliflower or 1/2 medium cauliflower

Preparation

  1. Cook the cauliflower until soft, about 10 minutes, then drain and mash.

  2. Mix all the ingredients together and fry in a non-stick pan until golden on both sides.
