Veggie Stirfry with Tofu

Ingredients

  • block tofu (drained and pressed then cut into cubes)
  • 2 tsp garlic chili sauce
  • 1 tbsp tamari
  • and 1 tbsp nutritional yeast

Preparation

  1. Add tofu cubes to a container and add in remaining ingredients

  2. Seal container and give container some gentle shakes to completely coat tofu

  3. Once coated add to a lined baking sheet and bake in the oven for 20-25 minutes at 400F

  4. For veggie stir fry, in a pan add sliced mushrooms and onion and sauté until onions are translucent

  5. Add in hearty veggies like broccoli, add a splash of tamari and 2 tbsp water

  6. Cover pan and let cook until broccoli has turned bright green, about 4-5 minutes

  7. Add less hearty veggies like bell pepper and add another splash of tamari and a splash of sweet chili sauce (I used about 1 tbsp)

  8. Sauté until veggies are fully coated and most of the liquid cooks off, 3 minutes

  9. Add in tofu and coat before removing from heat

  10. Served this mix with brown jasmine rice
