Comforting Raw Vegan Cauliflower Mash

Ingredients

  • 1/2 head cauliflower
  • 1/4 cup homemade cashew sour cream
  • 1 green onion
  • a touch of hot water

Toppings

  • fresh Campari tomatoes
  • 1/2 avocado
  • sliced green onion
  • nutritional yeast
  • fresh cracked pepper

Preparation

  1. Cut the cauliflower into florets.

  2. Soak the cauliflower florets in hot water.

  3. Blend the soaked cauliflower with homemade cashew sour cream, green onion, and a touch of hot water until warm.

  4. Top with fresh Campari tomatoes, sliced avocado, sliced green onion, nutritional yeast, and fresh cracked pepper.
