Vegan Tofu Eggless Salad

Ingredients

  • 1 package extra firm tofu
  • 2 1/2 tablespoons Vegenaise
  • 1 teaspoon yellow mustard
  • 2 ribs celery
  • 1 green onion
  • 1/2 teaspoon ground turmeric
  • 2 teaspoons capers with brine
  • 1/4 teaspoon kala namak (black salt)
  • 1/4 teaspoon smoked paprika
  • garlic powder to taste
  • onion powder to taste
  • salt to taste
  • pepper to taste

Preparation

  1. Drain the tofu well.

  2. Using a fork, break apart the tofu into coarse pieces resembling the size of chopped egg.

  3. Mix the tofu with the rest of the ingredients.

  4. Keep refrigerated for up to a week.
