Vegan Potato Salad with Avocado Dressing
Ingredients
- 4 boiled, peeled and cubed potatoes
- 3 sticks finely chopped celery
- 2 cups finely chopped lettuce
- 1 finely chopped green chili
- 1/2 teaspoon pepper
- Basil leaves to garnish
Dressing
- 2 avocados
- 1 green chili
- Handful of basil
- Handful of coriander
- Juice of 1/2 to 1 lemon
- 2 tablespoons @followyourheart Vegenaise
- 1 teaspoon smoked salt
- 1 teaspoon pepper
Preparation
Boil the potatoes until tender, then peel and cube them.
Finely chop the celery, lettuce, and green chili for the salad.
For the dressing, blend the avocados, green chili, basil, coriander, lemon juice, Vegenaise, smoked salt, and pepper until smooth.
Combine all the salad ingredients in a bowl.
Pour the dressing over the salad and toss gently to mix.
Garnish with basil leaves before serving.
