Chinese Mince with Rice Noodles

Ingredients

  • 4 spring onions
  • sesame oil
  • mushrooms
  • carrot
  • 2 cloves garlic
  • mince
  • cornstarch
  • half a pint vegetable stock
  • 1 teaspoon Chinese 5 spice
  • 1 tablespoon soy sauce
  • chilli flakes
  • frozen peas
  • ketchup
  • 1 tablespoon tomato paste
  • rice noodles
  • black sesame seeds

Preparation

  1. Chop and fry 4 spring onions in sesame oil

  2. Add chopped mushrooms and chopped carrot and cook for another 5 minutes

  3. Add 2 cloves of minced garlic and cook for another minute

  4. Add mince and cook for a bit

  5. Sprinkle the mixture with cornstarch and add about half a pint of vegetable stock

  6. Let it cook down and then add about 1 teaspoon of Chinese 5 spice, a tablespoon of soy sauce, and a sprinkling of chilli flakes (quantity varies based on spice preference) and some frozen peas

  7. Let it cook down until the carrots are soft and then add a small squirt of ketchup and about 1 tablespoon of tomato paste

  8. Cook the rice noodles by soaking in boiling water for 10 minutes

  9. Serve and sprinkle with black sesame seeds
