Coconut Curry Fish Stew

Ingredients

  • 1 can full fat coconut milk
  • 2 lbs large chunks of raw white fish, i used ono/wahoo
  • a large bag of frozen chopped vegetables or 4-6 cups fresh, i used a frozen normandy blend
  • 2 t garlic powder or a few minced cloves
  • 1-2t curry powder
  • 1-2t dried onion or half of a fresh (caramelized would be lovely!)
  • salt to taste
  • black pepper to taste (helps activate the turmeric in the curry powder
  • a few cups of broth or water

Preparation

  1. Bring the vegetables, coconut milk, and water/broth (enough to cover veggies) to a boil on the stove

  2. Add the fish and spices

  3. Simmer for 3 minutes

  4. Take off the heat and enjoy! You can make this with small cubes of potato or add rice if you’d like more carbs
