Coconut Curry (Instapot)

Ingredients

  • coconut curry (instapot)
  • 1 cup red lentils
  • 2 tbsp tomato paste
  • 2 tbsp soy sauce
  • 2 tbsp maple syrup
  • 1 medium onion, diced
  • 1 inch fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 cup lite coconut milk
  • 4 cups water
  • 1 red bell pepper diced
  • 1/4 tsp cardamom
  • 1 tbsp dry basil
  • 2 tsp curry powder

Preparation

  1. Literally dumped all the ingredients in the instapot, stirred it together, sealed it and set it on manual for 15 minutes

  2. I let it naturally depressurize and then give it a quick stir before serving

  3. Due to the lentils, the mixture will continue to thicken over time

  4. If you’d like to cook on the stove top, cook onions, ginger and garlic until fragrant

  5. Add in spices and cook for about 3 minutes before adding in remaining ingredients and bringing to a boil and then reduce to a simmer

  6. Cover and cook for about 20-30 minutes or until red lentils are fully cooked
