Creamy Vegan Pasta with Chickpeas and Peas

Ingredients

  • spaghetti
  • 4 garlic cloves
  • 1 red onion, diced
  • vegan chicken pieces
  • chickpeas
  • frozen peas
  • 500ml vegan oat cream
  • salt
  • lots of black pepper

Preparation

  1. Boil spaghetti in very salty water according to package instructions.

  2. In a frying pan, fry 4 garlic cloves, 1 diced red onion, vegan chicken pieces, and chickpeas for 6-7 minutes until crispy.

  3. Once pasta is boiled, drain 4/5 of the water, then add the spaghetti and some pasta water to the pan along with frozen peas and 500ml vegan oat cream.

  4. Simmer for 5-10 minutes and season with salt and plenty of black pepper.

  5. Serve warm. This dish is great for meal prep, can be frozen and reheated, and variations include using bean spaghetti for higher protein or substituting vegan chicken with tofu, tempeh, or omitting it. You can also make it tomato-based by using less oat cream and adding crushed tomatoes.
