Dandelion Salad

Ingredients

  • a big bowl of thoroughly cleaned dandelion
  • 4 big potatoes, cut into discs and cooked
  • 4 heaped tablespoons of beans, i used white
  • 1 tablespoon of dijon mustard
  • 1 tablespoon of ground flax seed
  • 1 clove of garlic, minced
  • 1 tsp of dried dill
  • apple cider vinegar to taste
  • salt and black salt to taste
  • roasted pepitas for garnish

Preparation

  1. Throw everything into one bowl, don’t wait for potatoes to cool, use them hot! Mix everything thoroughly, sprinkle with roasted pepitas, black salt, and serve

  2. Potatoes will break apart forming a thick dressing, and combining all the ingredients

  3. Pepita garnish will provide some extra crunch, and sprinkled black salt will give you the eggy taste
