Delicious Homemade Vegetable Soup with Pasta

Ingredients

  • 2 diced carrots
  • 2 diced zucchini
  • 2 cups bok choy
  • 2 diced celery sticks
  • 1 red onion diced
  • 1 tablespoon of parsley
  • 4 tablespoons of tomato sauce (I use Barilla basilico)
  • 1 litre of water
  • 250ml of organic vegetable stock
  • 1 vegetable stock cube
  • Pepper
  • 1 1/2 teaspoon of maple syrup
  • 120 grams of gluten free spaghetti pasta

Preparation

  1. Break the pasta in half before cooking.

  2. In a pot, place all the vegetables, parsley, stock cube, vegetable stock, water, sauce, and maple syrup and simmer for 40 minutes.

  3. Cook the pasta as per package instructions.

  4. Add the cooked pasta to the cooked broth.
