Chickpea and Vegetable Pasta
Ingredients
- 1 large zucchini diced
- 1 cup of spinach cut
- 1 cup of peas
- 1 cup of diced celery
- 2 small carrots diced
- 2 crushed garlic cloves
- 1 cup of sliced mushrooms
- 1 red onion diced
- 1 can of organic chick peas
- 1/2 tablespoon of maple syrup
- 1 vegetable stock cube
- 1/2 cup of diced tomatoes
- stock
- 1 litre of water
- 2 cups of liquid vegetable stock
- Pepper
- 150 grams of orecchiette or pasta of choice
Preparation
In a saucepan add the oil, vegetables, chickpeas and maple syrup. Sauté for 10 minutes then add the liquid stock, vegetable stock cube, diced tomatoes, water, and pepper. Let it simmer for an hour.
In a pot with boiling salted water add the orecchiette or pasta of choice. Cook as per instruction.
