Chickpea and Vegetable Soup

Ingredients

  • 1 large zucchini diced
  • 1/2 cup of spinach
  • 1 tomato cut in half
  • 1/2 cup of mushrooms
  • 2 small carrots diced
  • 2 crushed garlic cloves
  • 1 red onion diced
  • 1 can of organic chick peas
  • 1/2 tablespoon of maple syrup
  • 1 organic vegetable stock cube
  • 2 cups of organic vegetable stock
  • 1/2 cup of pasata
  • 1 litre of water
  • Pepper
  • 100 grams of spaghetti broken up or any pasta of choice

Garnish

  • 1 teaspoon of chilli and spring onion

Preparation

  1. In a saucepan add the oil, tomato, vegetables and maple syrup. Sauté the vegetables for 10 minutes then add the stock, water, pasata, pepper and stock cube. Let it simmer for 40 minutes.

  2. Remove the veggies and blend with some broth then return back to the saucepan.

  3. Add the chickpeas and cook a further 15 minutes.

  4. In a pot with boiling water add the pasta and cook as per instructions.

  5. Half way through the cooking process add the spinach and mushrooms.

  6. Once cooked add the pasta, spinach and mushrooms to the soup.

  7. Garnish with spring onions and chilli.
