Delicious Vegan Chili with Quinoa and Broccoli

Ingredients

  • 1 large onion, finely chopped
  • 2 garlic cloves, crushed
  • Olive oil
  • Mild chilli powder 1 tbsp
  • Ground cumin 1 tsp
  • Sweet potatoes roughly 750g, peeled and cubed
  • Quinoa 100g, drained
  • Chopped tomatoes 400g tin
  • Vegetable stock 600ml
  • Black beans 400g tin, rinsed and drained
  • Coriander to taste
  • Natural yogurt or dairy-free alternative

Preparation

  1. Cook the onion and garlic in 1 tbsp olive oil until soft.

  2. Add the chilli powder and cumin, cook for a minute then add the sweet potato, quinoa, tomatoes and stock.

  3. Simmer for 10 mins, add the beans and simmer for another 20-25mins until the potato and quinoa are tender and the sauce has thickened.

  4. Scatter over the coriander and serve in a bowl with a dollop of your chosen yogurt.
