Easy Turkey Meatballs with Roasted Eggplant

- 1 pound ground turkey
- 1/2 bell pepper
- 1 cup chopped spinach
- paprika
- garlic
- onion powder
- red pepper flakes
- pink Himalayan salt
Vegetables
- zucchini
- avocado oil
- eggplant
- asparagus
- tomatoes
Preparation
Meatballs
Sauté 1/2 bell pepper.
Mix with 1 pound ground turkey and 1 cup chopped spinach.
Add paprika, garlic, onion powder, red pepper flakes, and pink Himalayan salt.
Roll into balls.
Bake at 400°F for about 24 minutes until internal temperature reaches 170°F.
Use ground turkey without added hormones for better quality.
Vegetables
Drizzle eggplant with avocado oil, garlic, and pink Himalayan salt.
Bake eggplant at 400°F for about 20 minutes.
Roast zucchini in avocado oil.
Roast asparagus and tomatoes similarly, seasoned as desired.
Note that eggplant may become soggy if meal prepped, so consume fresh.
