Easy Turkey Meatballs with Roasted Eggplant

Ingredients

  • 1 pound ground turkey
  • 1/2 bell pepper
  • 1 cup chopped spinach
  • paprika
  • garlic
  • onion powder
  • red pepper flakes
  • pink Himalayan salt

Vegetables

  • zucchini
  • avocado oil
  • eggplant
  • asparagus
  • tomatoes

Preparation

Meatballs

  1. Sauté 1/2 bell pepper.

  2. Mix with 1 pound ground turkey and 1 cup chopped spinach.

  3. Add paprika, garlic, onion powder, red pepper flakes, and pink Himalayan salt.

  4. Roll into balls.

  5. Bake at 400°F for about 24 minutes until internal temperature reaches 170°F.

  6. Use ground turkey without added hormones for better quality.

Vegetables

  1. Drizzle eggplant with avocado oil, garlic, and pink Himalayan salt.

  2. Bake eggplant at 400°F for about 20 minutes.

  3. Roast zucchini in avocado oil.

  4. Roast asparagus and tomatoes similarly, seasoned as desired.

  5. Note that eggplant may become soggy if meal prepped, so consume fresh.
