Fathers Day Brunch

Ingredients

  • 1lb breakfast sausage
  • 1 dozen eggs
  • 6oz fresh mushrooms, sliced
  • 2 large handfuls spinach
  • 1red onion, diced
  • salt+pepper
  • 1 tbsp bacon fat, ghee or coconut oil

Preparation

  1. Preheat the oven to 350 degrees .

  2. In a large cast iron melt the cooking fat

  3. Add in the sausage + cook until only the slightest amount of pink is visible, then remove from pan, drain + set aside

  4. Add the onions and mushrooms to the pan and cook 5-10minutes .

  5. Next add the spinach, S + P .

  6. Whisk the eggs together in a separate bowl .

  7. Add the sausage back into the pan + pour the eggs over top .

  8. Tilt the pan back + forth to evenly distribute the eggs .

  9. Cook on the stove top 7 minutes then transfer into the oven .

  10. Cook for 10-15minutes or until the eggs have set .

  11. Remove and cool for 5 minutes prior to eating
