Fragrant Fish Curry

Ingredients

  • 4 fillets of frozen fish⠀
  • 1 tin chopped tomatoes⠀
  • 500g mixed frozen veggies⠀
  • 1 tbsp tomato purée ⠀
  • 2 tsp tumeric⠀
  • 1 tsp each cumin, ginger, coriander⠀
  • 1 crushed garlic clove ⠀
  • mixed herbs⠀
  • 2 inch block of creamed coconut⠀
  • 100ml milk⠀

Preparation

  1. Place the frozen fish in a pan, cover with the chopped tomatoes and simmer 10 mins to defrost. Flake the fish.⠀

  2. Add in the frozen veggies and simmer.⠀

  3. Add in tomato purée, spices, garlic and simmer.⠀

  4. When it’s smelling smelling good add in the creamed coconut block, milk and herbs. Allow it to simmer and meanwhile cook the rice
