Fragrant Fish Curry
Ingredients
- 4 fillets of frozen fish⠀
- 1 tin chopped tomatoes⠀
- 500g mixed frozen veggies⠀
- 1 tbsp tomato purée ⠀
- 2 tsp tumeric⠀
- 1 tsp each cumin, ginger, coriander⠀
- 1 crushed garlic clove ⠀
- mixed herbs⠀
- 2 inch block of creamed coconut⠀
- 100ml milk⠀
Preparation
Place the frozen fish in a pan, cover with the chopped tomatoes and simmer 10 mins to defrost. Flake the fish.⠀
Add in the frozen veggies and simmer.⠀
Add in tomato purée, spices, garlic and simmer.⠀
When it’s smelling smelling good add in the creamed coconut block, milk and herbs. Allow it to simmer and meanwhile cook the rice
