Ginger Fried Rice with Vegetables

Ingredients

  • 1 1/3 cup rice
  • 1 cup chopped onions
  • 2 thumbs ginger
  • 5-6 garlic cloves
  • 3 tbsp avocado oil
  • 3-4 cups chopped cauliflower
  • 1 1/2 cups diced carrots
  • 2 tbsp gochujang
  • 1 tbsp mirin
  • 2 tbsp tamari soy sauce
  • 2 tbsp coconut sugar
  • 1 cup kimchi
  • 1/3 cup water
  • 2 tbsp lime juice
  • 1 tsp tapioca flour
  • 1 tsp pink salt

Toppings

  • cilantro
  • sesame seeds
  • black pepper
  • lime juice

Preparation

  1. Wash and cut all vegetables

  2. Cook the 1 1/3 cups of rice according to package instructions or use a rice cooker

  3. Heat oil in a large skillet or wok and add onions, then sauté for 5 minutes

  4. Lower heat and add minced garlic and ginger, then sauté for 5-7 minutes

  5. Add gochujang, mirin, soy sauce, salt, sugar, water, lime juice, and tapioca flour, then mix well until a viscous mixture forms

  6. Add cauliflower, carrots, and kimchi, then mix well for 5 minutes

  7. Add the cooked rice to the skillet and mix well, adding more salt if needed

  8. Top with more lime juice, sesame seeds, cilantro, and black pepper
