Ginger Fried Rice with Vegetables
Ingredients
- 1 1/3 cup rice
- 1 cup chopped onions
- 2 thumbs ginger
- 5-6 garlic cloves
- 3 tbsp avocado oil
- 3-4 cups chopped cauliflower
- 1 1/2 cups diced carrots
- 2 tbsp gochujang
- 1 tbsp mirin
- 2 tbsp tamari soy sauce
- 2 tbsp coconut sugar
- 1 cup kimchi
- 1/3 cup water
- 2 tbsp lime juice
- 1 tsp tapioca flour
- 1 tsp pink salt
Toppings
- cilantro
- sesame seeds
- black pepper
- lime juice
Preparation
Wash and cut all vegetables
Cook the 1 1/3 cups of rice according to package instructions or use a rice cooker
Heat oil in a large skillet or wok and add onions, then sauté for 5 minutes
Lower heat and add minced garlic and ginger, then sauté for 5-7 minutes
Add gochujang, mirin, soy sauce, salt, sugar, water, lime juice, and tapioca flour, then mix well until a viscous mixture forms
Add cauliflower, carrots, and kimchi, then mix well for 5 minutes
Add the cooked rice to the skillet and mix well, adding more salt if needed
Top with more lime juice, sesame seeds, cilantro, and black pepper
