Glorious Bean Recipe
Ingredients
- 1 large leek
- 1 large courgette
- 1/2 a brown onion
- 4 cloves of garlic
- 1 tin of butterbeans
- 1 lemon, zest and juice
- 250ml dry white wine
- 1/4 of a stock cube
- large handful of fresh basil
- olive oil, salt & pepper
Preparation
Pre-heat the oven to 190c
Cut the leeks into thick rounds and do the same with the courgette
Drizzle with olive oil, salt & pepper and roast for about 20-25 minutes until charred and tender
Separately, slice the onion into thin half moons and chop the garlic
Begin to sauté the onions until just starting to colour, about 5 minutes, then add the garlic and sauté for another minute
Pour in the wine or sub for water with the stock cube crumbled in, let it sizzle and bubble for a minute or two and then pour in the beans with their soaking liquid - this will help thicken the sauce
Leave it all to simmer and once the veg is ready add that in too
Grate in the zest of a lemon and squeeze in the juice, season with salt and pepper and finish with fresh basil leaves!
