Glorious Bean Recipe

Ingredients

  • 1 large leek
  • 1 large courgette
  • 1/2 a brown onion
  • 4 cloves of garlic
  • 1 tin of butterbeans
  • 1 lemon, zest and juice
  • 250ml dry white wine
  • 1/4 of a stock cube
  • large handful of fresh basil
  • olive oil, salt & pepper

Preparation

  1. Pre-heat the oven to 190c

  2. Cut the leeks into thick rounds and do the same with the courgette

  3. Drizzle with olive oil, salt & pepper and roast for about 20-25 minutes until charred and tender

  4. Separately, slice the onion into thin half moons and chop the garlic

  5. Begin to sauté the onions until just starting to colour, about 5 minutes, then add the garlic and sauté for another minute

  6. Pour in the wine or sub for water with the stock cube crumbled in, let it sizzle and bubble for a minute or two and then pour in the beans with their soaking liquid - this will help thicken the sauce

  7. Leave it all to simmer and once the veg is ready add that in too

  8. Grate in the zest of a lemon and squeeze in the juice, season with salt and pepper and finish with fresh basil leaves!
