Hassleback Potatoes
Ingredients
- potatoes
- olive oil
- kosher salt (big flakes)
- thyme
- cracked pepper
- and dried parsley on top
- 1/4 cup water
Preparation
Preheat oven to 450 F
Place cut potatoes into a baking dish
Spoon in or brush in olive oil making sure to get between each layer
Sprinkle kosher salt (big flakes), thyme, cracked pepper, and dried parsley on top
Pour in 1/4 cup water into bottom of pan
Cover with aluminum foil
Bake for 45 min
Remove foil and bake 15-20 min longer
Inside of layers should be able to be pierced with a fork
