High Protein Tofu and Zucchini Noodles
Ingredients
- 1 small broccoli head
- 1 medium zucchini
- 200g firm tofu
- 1 cup edamame beans
- 1 carrot
- 1/2 cup peanuts
- Fresh coriander
Preparation
Steam the broccoli florets until just tender.
Heat a little oil in a frying pan and add the zucchini noodles. Cook for 5 minutes or until soft.
Cut the tofu into bite-sized pieces.
Assemble the bowl by adding the steamed broccoli, zucchini noodles, edamame, carrot, and peanuts.
Garnish with fresh coriander. Serve immediately.
