High Protein Tofu and Zucchini Noodles

Ingredients

  • 1 small broccoli head
  • 1 medium zucchini
  • 200g firm tofu
  • 1 cup edamame beans
  • 1 carrot
  • 1/2 cup peanuts
  • Fresh coriander

Preparation

  1. Steam the broccoli florets until just tender.

  2. Heat a little oil in a frying pan and add the zucchini noodles. Cook for 5 minutes or until soft.

  3. Cut the tofu into bite-sized pieces.

  4. Assemble the bowl by adding the steamed broccoli, zucchini noodles, edamame, carrot, and peanuts.

  5. Garnish with fresh coriander. Serve immediately.
