Lentil Sloppy Joes with Spiced Sauce

Ingredients

  • 1 cup brown lentils
  • 3 cups water
  • Olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 carrot, diced
  • 15 oz tomato sauce or passata
  • 1/2 cup vegetable broth
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon coconut sugar
  • 2 tablespoons Worcestershire sauce
  • Buns (optional)
  • Greens (optional)
  • Shredded cheese or vegan cheese (optional)

Preparation

  1. Cook the brown lentils by bringing 1 cup lentils and 3 cups water to a boil, then simmer for 20 minutes and drain.

  2. Heat olive oil in a large skillet over medium heat.

  3. Add 1 diced onion and cook for 5 minutes.

  4. Add 2 minced garlic cloves, 1 diced red bell pepper, and 1 diced carrot; continue cooking until vegetables are soft.

  5. Add 15 oz tomato sauce, 1/2 cup vegetable broth, 1 teaspoon chili powder, 1 teaspoon paprika, 1 teaspoon cumin, 1/2 teaspoon cayenne pepper, 1 tablespoon coconut sugar, and 2 tablespoons Worcestershire sauce.

  6. Bring the mixture to a boil, then simmer on low for 10-15 minutes.

  7. If the mixture is too thick, add more vegetable stock; if too thin, simmer longer.

  8. Serve in buns or on greens, with optional shredded cheese or vegan cheese.

Tips

  1. Cook lentils ahead of time for easier preparation.
