Lentil Sloppy Joes with Spiced Sauce
Ingredients
- 1 cup brown lentils
- 3 cups water
- Olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 carrot, diced
- 15 oz tomato sauce or passata
- 1/2 cup vegetable broth
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 teaspoon cayenne pepper
- 1 tablespoon coconut sugar
- 2 tablespoons Worcestershire sauce
- Buns (optional)
- Greens (optional)
- Shredded cheese or vegan cheese (optional)
Preparation
Cook the brown lentils by bringing 1 cup lentils and 3 cups water to a boil, then simmer for 20 minutes and drain.
Heat olive oil in a large skillet over medium heat.
Add 1 diced onion and cook for 5 minutes.
Add 2 minced garlic cloves, 1 diced red bell pepper, and 1 diced carrot; continue cooking until vegetables are soft.
Add 15 oz tomato sauce, 1/2 cup vegetable broth, 1 teaspoon chili powder, 1 teaspoon paprika, 1 teaspoon cumin, 1/2 teaspoon cayenne pepper, 1 tablespoon coconut sugar, and 2 tablespoons Worcestershire sauce.
Bring the mixture to a boil, then simmer on low for 10-15 minutes.
If the mixture is too thick, add more vegetable stock; if too thin, simmer longer.
Serve in buns or on greens, with optional shredded cheese or vegan cheese.
Tips
Cook lentils ahead of time for easier preparation.
