Lettuce Cups
Ingredients
- 20 oz canned pineapple tidbits
- 3 tbsp honey
- 3 tbsp lite tamari or soy sauce
- 2 cloves minced garlic and 1/2 cup water
- yellow onion
- 1.5 lb cooked chicken thighs
- 12 ounces thawed and chopped broccoli and pineapple
Preparation
Lettuce cups // drain 20 oz canned pineapple tidbits and save juice
To juice, add 3 tbsp honey, 3 tbsp lite tamari or soy sauce, 2 cloves minced garlic and 1/2 cup water
Bring mixture to a simmer on medium heat in a large skillet
Optional, add half of a chopped yellow onion
Add 1
Lb cooked chicken thighs, 12 ounces thawed and chopped broccoli and pineapple
Fold to coat and simmer till warmed through, then serve with lettuce cups
