Lettuce Cups

Ingredients

  • 20 oz canned pineapple tidbits
  • 3 tbsp honey
  • 3 tbsp lite tamari or soy sauce
  • 2 cloves minced garlic and 1/2 cup water
  • yellow onion
  • 1.5 lb cooked chicken thighs
  • 12 ounces thawed and chopped broccoli and pineapple

Preparation

  1. Lettuce cups // drain 20 oz canned pineapple tidbits and save juice

  2. To juice, add 3 tbsp honey, 3 tbsp lite tamari or soy sauce, 2 cloves minced garlic and 1/2 cup water

  3. Bring mixture to a simmer on medium heat in a large skillet

  4. Optional, add half of a chopped yellow onion

  5. Add 1

  6. Lb cooked chicken thighs, 12 ounces thawed and chopped broccoli and pineapple

  7. Fold to coat and simmer till warmed through, then serve with lettuce cups
