Maple and Orange Spiced Ham

Ingredients

  • 3.5kg gammon joint
  • 2 clementines
  • 2 star anise
  • 2 tablespoons cloves
  • 5 tablespoons maple syrup

Preparation

  1. If the gammon joint needs soaking, soak it in cold water to release salt.

  2. Coat the gammon in 3 tablespoons of maple syrup and the juice of 2 clementines.

  3. Add the remaining parts of the clementines and 2 star anise.

  4. Cover with foil and cook in the oven at 140 degrees for 4 hours.

  5. Remove the foil, then carefully remove the rind with a sharp knife, leaving the fat intact.

  6. Score a diamond grid on the fat and insert cloves at each intersection.

  7. Baste with the cooking juices and add the remaining maple syrup.

  8. Increase the oven temperature to 180 degrees and cook for another 30 minutes, checking after 15 minutes to prevent burning, until golden.

  9. Remove from the oven and let rest for 25 minutes.

  10. Reserve the juices and spoon them over the ham.
